I've used Wakka with good results, but unfortunately, that one seems to be dead. Several spinoffs have emerged, for example http://wikka.jsnx.com/HomePage , haven't tried it my self though.
MediaWiki is the software behind wikipedia and family so it's very versatile, seems to be fairly easy to install (http://www.mediawiki.org/wiki/MediaWiki).
There's an abundance of Wiki software out there, and if we're not careful we could have a flame war on our hands :o)

Hi Jim,
We should start a Wiki, but for more of a FAQ-like creature. For
documentation, I'm going to write a book with draft chapters
appearing as I write them. Big examples etc...
A wiki we can start right away though. Anybody want to recommend a
simple to use, simple to install wiki, free, usable with apache?
